Veggie Stuffed Zucchini Boat

4 medium zucchinis, cut in half lengthwise
1/2 cup corn
1 cup cooked Quinoa
1/2 Black bean, cooked
1/8 Cup salsa
1 tsp garlic powder
1 tsp cumin
1 tsp salt to taste
1 tsp chili powder
1/4 cup reduced fat Mexican blend shredded cheese
1/8 cup chopped scallions and cilantro, for topping
Preheat oven to 400°F.
Cut zucchini in half lengthwise; scoop out pulp, leaving 1/2-in. shells. Finely chop pulp.
Place zucchinis in a baking dish. Sprinkle with salt and bake, uncovered for 15-20 minutes or until zucchini is tender.
In a bowl, mix corn,black beans,quinoa,garlic powder, cumin, chili powder and salsa stir well to combine.
Spoon veggie mixture into cooked zucchini then top with cheeses. Bake in the oven until cheeses are melted, about 5-8 minutes. Garnish with cilantro and scallion, serve warm.
