Baked feta pasta
A simple and delicious recipe
500g cherry tomatoes
One block of feta cheese
6 to 8 cloves of garlic
¼ cup Olive oil
9 oz pasta
Preheat the oven to 400°F.
Place cherry tomatoes in a baking dish and drizzle with enough olive oil and black pepper to coat the cherry tomatoes. Place a block of feta cheese in the middle of the dish and add garlic. Drizzle more olive oil on top of the feta cheese. Sprinkle some dried oregano on top.
Place the dish in an oven and bake for 30 minutes. After 30 minutes, turn the heat up to 450°F and roast until the feta is golden brown and the tomatoes have burst..
While the feta is baking, cook the pasta according to the package directions. Save 1-2 cups of the pasta water, then drain well.
Once that’s done, the cherry tomatoes should be blistered and the cheese should be melted. Once you’ve removed them from the oven you’ll want to squeeze your garlic out of its skin. Mash the ingredients together to make a sauce.
Then, simply toss it with pasta. Stir everything together until well coated and creamy, adding in a bit of pasta water to loosen if too thick. Taste and season with salt and pepper.
