Persian Raisin Cookies
Shirini keshmeshi/persian raisin cookies are Persian classic cookies that taste buttery, slightly chewy on the inside and crispy on the outside and absolutely my favorite for Persian Norouz(Persian new year). These are surprisingly easy and perfect for parties! I would pass you a cookie if I could. Make these once and you will make them again and again.
- 2 1/3 cup all-purpose flour
- 225 g unsalted butter, melted
- 1 teaspoon vanilla
- ½ teaspoon rosewater
- 1 3/4 cup sugar
- 4 eggs
- 2 cups raisins
Mix butter, sugar, vanilla and rose water together.
Add the eggs, one at a time, and mix well.
Fold in the raisins.
Fold in the flour .
Chill the dough in the fridge for at least 30 minutes while preheating your oven to 350 F degrees.
Scoop dough by heaping teaspoonfuls. Roll 1 to 1-1/4-inch balls. Place balls 3 inches apart on baking sheet lined with parchment.
Bake for 14-16 minutes or until browned at the edges and golden on top.
Remove from oven and allow to cool before removing from baking sheet.
