A perfect dinner loaf, savory meatless loaf made from a healthy combo. Serve them with mashed potatoes and cooked veggies.
- 2 cups cooked lentils
- ½ cup quick oats
- ½ cup panko breadcrumbs
- 3 tbs flour
- 1 onion, diced
- 2 carrots, diced
- 1 clove garlic, minced
- 5 tablespoons ketchup
- 2 tablespoon BBQ sauce
- salt and pepper to taste
- Preheat the oven to 350 degrees F.
- In a large skillet over medium heat, saute onion, garlic and carrots with salt and pepper until softened.
- In a food processor, blend together the cooked lentils, cooked vegetables, tomato paste, bbq sauce, flour, oats, and panko bread crumbs. Do not over mix.
- Add mixture to prepared loaf pan, brush some bbq sauce over the top of the loaf. Bake loaf for 35 minutes.
