Grilled Vegetable Pasta
- 1 zucchini
- 1/2 onion
- 15 grape/cherry tomatoes
- 2 Tbsp olive oil
- 250 g pasta any shape you desire
- Salt and Pepper to taste
- 4 tbs olive oil
- 3 Tbsp balsamic vinegar
- 1 Tbsp mayonnaise
- 1/2 Tbsp Dijon mustard
- Salt and pepper to taste
Grill the vegetables until tender and drizzle olive oil over top of vegetables or you can pan fry veggies with no oil then drizzle olive oil over top of them.
Allow the vegetables to cool after grilling.
Bring a large pot of salted water to a boil to cook the pasta. Once boiling, add the pasta and boil for 7-10 minutes, or just until the pasta is tender. Drain the pasta and allow it to cool slightly.
For the balsamic dressing, in a bowl add the olive oil, balsamic vinegar, mayonnaise, Dijon, salt, and pepper. Whisk them together until combined.
In a bowl, combine the pasta and vegetables. Pour the vinaigrette over top, starting with half and adding more to your liking. Gently stir the pasta and vegetables until everything is coated in dressing.
