Brown rice Avocado bowl
Solve the daily dilemma of, “What’s for dinner?” by making meals that are a lot healthier than you think.
- 1 cups cooked brown rice
- 2 tablespoons oil
- 2 large eggs
- 1 avocado, chopped
- salt, freshly ground pepper
Heat oil in a nonstick skillet over medium-high heat. Crack eggs into skillet; season with salt and pepper and cook until whites are set around the edges, about 2 minutes.
Divide rice among bowls; top with eggs and avocado.
