This is moist, super yummy bread. You can doubled this recipe and worked perfectly. Kids and grown-ups loved them!
- 200g all-purpose flour
- 6 tbs unsalted butter, melted
- 1 egg
- 140g sugar
- 1 teaspoon vanilla extract
- 1 ½ cups grated fresh zucchini
- 1/2 teaspoon baking soda
- 1/2teaspoon baking powder
- 1/2 teaspoons cinnamon
- 1 teaspoon nutmeg
Preheat oven to 350 degrees F (175 degrees C). Grease loaf plans.
Mix together the flour, baking soda, baking powder, cinnamon, and nutmeg.
Beat egg, butter, vanilla, and sugar together in a large bowl then add grated zucchini stir until well combined.
Stir dry ingredients into the zucchini mixture.
Pour batter into prepared pans. Bake for 30 to 35 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
