Stuffed Bell Peppers
These cheesy stuffed bell peppers make a great side dish or a meal in themselves.
200g ground beef
1 onion, finely chopped
1/2 cup cooked white rice
5 red bell peppers or any color
2 tbs tomato paste
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup mozzarella cheese, shredded
1/4 cup parsley, chopped
Preheat the oven to 350 degrees. cook the ground beef with the onions in a large skillet.
Add tomato paste salt, pepper and thyme to the skillet with the meat. Bring to a simmer and cook about 5 minutes.
Add the cooked rice to the skillet with meat and stir to combine. While the filling is simmering, split the peppers in half and remove the seeds.
Bring a pot full of water to boil, add bell peppers let simmering for 5 minutes then drain them, set aside.
Place the peppers on a large pan and spoon an equal amount of meat mixture into each bell pepper and sprinkle with cheese.
Place in the oven just until the cheese is melted, about 10minutes. Enjoy!
