I love baking with fruits, Baking with fruit is so much fun! They are incredibly versatile! Fruits are also one of my favorite things to eat. I couldn’t imagine dessert without fruits. If you don’t have a mulberry in your hand, any other berry would also work.
1 1/2 cups flour
2 tsp baking powder
1 cup sugar
1 cup plain yogurt
1/2 cup vegetable oil
2 large eggs
1/2 tsp vanilla
1 cup mulberries
Preheat the oven to 350°F. Line muffin cups with paper liners.
In a bowl, whisk together the flour and baking powder.
In a large bowl, mix together the sugar, yogurt, oil, eggs, and vanilla. Stir in the dry ingredients into the wet ingredients. Mix just until batter comes together. Carefully fold in the berries with a spatula. Divide mixture evenly between muffin cups.
Bake in the preheated oven for 30 minutes or until wooden pick inserted in center of cupcake comes out clean. Let cupcakes cool in the pan for 15 minutes then remove to wire racks to finish cooling.
