Don’t you tired of serving traditional lasagna?! Then, Serve these as a main course with some salad to make a delicious meal. It’s seriously the easiest, simplest, best comfort food oozing with yummy cheesy and tomato flavors. and this is perfect for serving kids, as well.
- 2 tablespoons oil
- 1 small onion
- 250 g ground beef
- 3 tbs tomato paste
- 1 tsp dried thyme
- 1 tsp curry powder
- 1 tsp garlic powder
- ½ lemon juice
- salt & pepper to taste
- 100-150 g mozzarella cheese, grated
- 8 lasagna sheets
Over medium heat saute onions, until tender. Stir in ground beef cook well until brown and add tomato paste stir well until well incorporated. Next add all the seasoning then add lemon juice. Reduce heat to low and cook 30 minutes or so.
Bring large pot of salted water to boil. Cook lasagna sheets.
Preheat oven to 350 F. Line 6 jumbo muffin tins with parchment paper/ foil.
Line the edges of the muffin tins with 1 or ½ one pasta sheet per cup, it depends on your muffin tins size. Then lay out the other half of pasta sheet on the bottom. Spoon about 1/2 tablespoon of sauce into the bottom of each cup . Next cut pasta sheets into quarters and press one of these pieces of pasta into the bottom on top of the sauce. Top pasta sheet with a generous tablespoon of meat sauce and then a generous tablespoon of cheese. Repeat this pasta-sauce-cheese layering one more time. Top these lasagna cups with more sauce and the remaining mozzarella cheese.
Bake for 25-30 minutes or until everything is hot and bubbly.
