Chicken Salad with Strawberry Vinaigrette
Thia is a lovely summer dinner, light and yummy. Usually people believe that to make a great Salad, mayo is the key to flavor. And many of us probably grew up with Salads made with mayo only dressings. I personally love to make a lighter dressing for my salads, this strawberry vinaigrette is divine!
- 1 cup cooked chicken, chopped
- 4 cups romaine, chopped
- 1/2 cups strawberries, chopped
- 1/2 cup Cucumber, sliced
- 1 cup strawberries
- ¼ cup fresh lemon juice
- ¼ cup olive oil
- 1 tsp Dijon mustard
- salt and pepper to taste
To make the strawberry vinaigrette: In a food processor or blender, pulse the strawberries, lemon juice, olive oil, dijon mustard, salt and pepper until smooth. Set aside.
In a large bowl toss the chicken, romaine, strawberries and cucumbers. Toss with dressing or drizzle on top of served portions.
