- 1 cup All purpose flour
- 1 large egg
- 1tsp Baking powder
- 2 tbsp sugar
- 3/4 cup buttermilk*
- 1 tbsp melted butter
- 1 tsp vanilla extract
mix all the ingredients in a bowl until very smooth, As soon as there are no lumps, stop mixing.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
*You might not always have buttermilk on hand, but you can make your own with just two very common ingredients. All you need for this buttermilk pancake is 3/4 cup milk and 1 tbs fresh lemon juice or white distilled vinegar.
