Chocolate Chips Pomegranate Cookies
This is my grandmother’s recipe that she passed down to me, and it is quite simply the best chocolate cookie dessert I have ever had.
- 56 gr butter, room temperature
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 small egg
- 1 tsp vanilla extract
- 80 gr all-purpose flour
- 1/2 cup quick cooking oats
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup dark chocolate chips
- 1/2 cup pomegranate arils
Preheat the oven to 370. Line a large baking sheet with parchment paper or aluminum foil and grease lightly.
Cream butter and sugars until smooth. Add egg and vanilla extract and mix well. In a separate bowl, whisk together flour, oats, baking powder&baking soda. Gradually add dry ingredients to butter mixture, mixing just until combined.
Stir in chocolate chips, then lightly stir in pomegranate arils. Drop dough by tablespoonfuls onto lined baking sheet about 4 cm apart.
Bake for 12-13 minutes, until golden brown. Let cool on baking sheet for a couple minutes before removing to racks to cool completely.
