What do you do with leftover mashed potatoes? Next time, turns those leftover mashed potatoes into something epic. Try these crispy, crunchy potato bites. Everybody Loved them!
- 4 slices deli ham, diced
- 3 cups mashed potatoes
- 1 cup shredded mozzarella/cheddar cheese
- 2 tablespoons dried parsley
- 2 large eggs, beaten
- 1 1/2 cups Panko
- 1/2 cup flour
- 1 Tbsp garlic salt (or sub with equal parts salt and garlic powder)
- 1/2 tsp paprika
- 1/2 tsp black pepper, freshly ground
- Oil for frying
Heat vegetable oil in a sauepan or dutch oven over medium high heat.
In a large bowl, combine mashed potatoes, cheese, dried parsley, pepper, garlic salt, paprika, and ham.
Using a small cookie scoop, Shape mixture into 1-inch balls.
Set up three bowls. In the first add flour. In the second, add eggs use a fork to beat eggs. In the third bowl, add panko crumbs.
Working one at a time, Coat potato balls with flour, then dip into eggs, and dredge in Panko, pressing to coat.
Working in batches, add balls to the Dutch oven and cook until evenly golden and crispy, about 2-3 minutes. Drain on paper towels.
Serve warm potato bites with sauce.
