This is a popular restaurant style tomato soup recipe. The tomato soup is awesome, perfect fall treat. I have had Tomato soup in many places with different recipes but this is the one you ‘re gonna love it. it is very easy and very tasty. you can left behind some of the tomatoes pieces while I blending the rest and it made for a chunky soup. sometimes I use vegetable stock to keep it vegetarian.
10 tomatoes, halved
3 garlic cloves
1Medium onion, quartered
2Tbs olive oil
1/2cup chicken stock
Fresh basil leaves for garnish
Preheat your oven to 400 F.
Grease a baking pan.Combine halved tomatoes+garlic+onion+olive oil+salt+pepper, toss to coat.
Let them roast until tender.
Remove from oven and let cool slightly
Transfer the mixture to a blender, blend until smooth.
Pour mixture into a pot and add chicken stock, cook over medium-high heat until heated through and thickened then add cream.
Garnish with basil leaves.
