This is incredible, easy and much healthier version than ground beef meatloaf. Quinoa is a complete source of protein and easy to digest. The quinoa makes it extra filling, satisfying, and of course very nutritious!
- 1 whole chicken breast, ground
- 1/2 cup panco bread crumbs
- 1/2 quinoa, cooked
- 1 small onion,grated
- 1/2 cup carrot and peas mixed, cooked
- 2 tbsp. Fresh dill
- 2 large eggs
- BBQ sauce
- 1 tsp garlic powder
- salt and pepper
Preheat oven to 400°F.
In large bowl, place ground chicken, onion, cooked quinoa, panco, vegetables, dill, eggs, garlic powder, salt, and pepper mix until blended, but do not over mix. In prepared pan, shape meat mixture into 9″ by 5″ loaf. brush with bbq sauce on top.
Bake meatloaf 45 to 55 minutes.
Let meatloaf stand 10 minutes to set juices for easier slicing.
