- 3 tablespoons unsalted butter
- 2 cups leeks, roughly chopped
- 3 cups low sodium chicken or vegetable broth
- 3 tbs flour
- 1 cup milk
- 1/4 cup heavy cream, optional
- parsley, for serving
- salt and pepper to taste
Bring a large pot of water to boil add chopped leeks and cook for bout 8-10 minutes. drain and rinse with cold water, set aside.
Melt the butter over medium heat in a pot. Add the leeks and flour, stirring regularly.
Finally, add the chicken/vegetable broth, milk, and salt and pepper. Stir to dissolve all of the flour from the bottom of the pot. Allow the liquid to come up to a simmer, at which point the flour will slightly thicken the broth.
Stir the cream into the soup. Serve hot. garnish with parsley.
